Madam and Eve’s Mielie Souffle
Remember these two?
Of cause you do! They are not only South Africa’s most popular and successful cartoon strip, they are the people who put mielies on the map.
Now we know Madam does not really cook and neither does Eve but we encourage you to pour yourself a gin-and-tonic and give this super fantastic and truly South African recipe a try. We promise there will be no trials and tribulations after the very first bite.
Ingredients
- 4 eggs, separated
- 50ml margarine, melted
- 80ml flour
- 1 tin mielie pitte, drained
- pinch salt
- 250ml milk
- 250ml cheddar cheese
Method
- Preheat the oven to 180°C.
- Melt the margarine and add the flour and salt
- Stir until pasta like
- Add the milk, small amounts at a time, and stir constantly until smooth
- Add cheese and mielie and remove from heat.
- Add the egg yokes one at a time and beat the egg whites in another bowl until stiff.
- Take a big spoon and stir the stiff egg whites into the cheese and mielie concoction.
- Transfer it into a buttered baking dish
- Bake at 180°C for 45 minutes
